The Art of Gelato Making

Gelato is Italian for ice cream, yet the two products are distinctively different for at least three reasons. First, Gelato has a much lower amount of fat, usually ranging between 6% and 8%. On the other hand, ice cream’s fat content is usually between 15% and 22%. Moreover, gelato’s fat content is due predominantly by the use of fresh milk cream of the highest quality, while fat found in ice cream is often originated by the use of industrial butter. But less fat in gelato does not equal a diminished creamy taste. Quite the opposite!

Second, Gelato is made fresh daily in small batches using equipment imported from Italy that incorporate small quantities of air into the product. While ice cream has an overrun (the air incorporated in the batch, and therefore the final product) up to 100%, in gelato this percentage is around 20%. A gallon of ingredients whips up 2 gallons of traditional ice cream while the same quantity of gelato ingredients yields just 1.2 gallons of creamy indulgence. The final result is a more dense product that maintains longer and better creaminess.

Warmer Temperature than Icecream

Third, Gelato is held and served at a temperature that is “warmer” than ice cream. Gelato’s “warmer” temperature translates into a more genuine, delightful and intense flavor in the mouth of its aficionados. Gelato could have less fat than ice cream but it sure has more flavor. Gelato, half the fat… double the flavor. Sorbetto is another Italian specialty, one that is especially appreciated in the South of Italy. Different from Gelato, sorbetto is milk free and fat free. Its amazing taste is given by the fresh fruit used in its preparation.

I sure do love this place! They serve some pretty delicious gelato here!! On the left side are the fruity gelatos, and to the right are the nutty gelatos. So far, I 've tried Very Berry, Passionfruit, Mango, Strawberry, and Black Raspberry, and they're all pretty good. My least favorite of out of the list would be the black raspberry, since it has a bit of an unexpected milky taste to it. But otherwise, everything else I've tried is on point. The people who work here are also super sweet and nice. It's just a wonderful environment in general. I'll be sure to drop by and try out more flavors!

Best gelato I've ever had, including places in Boston. It's shocking to me that a place in Methuen (classy, right?) has better food than its competitors downtown. I've been a few times with my friend, Tori G, and we're always excited to see what new flavors they have. I would guess there are about 20-30 flavors to choose from but they are always rotating in new ones--esp for seasonal purposes. The pumpkin flavor in the fall was great! Most recently I walked in and didn't even need to think about what to get...my eyes, like a fat kid sensor, were immediately drawn to the CHEESECAKE and BLACK RASPBERRY. The owner even asked if I wanted to sample first, and I said, "Don't bother. I KNOW WHAT I WANT" like some demonic Fat Albert took custody of my brain functions. Prices are very fair, ... If you're not sure which flavor to order, they'll let you sample as much as you like. The employees are VERY nice and are always pleased to see customers...never had to wait to be served and their tip basket is always very full--everyone loves them. *Never tried but I do know they also sell coffee, espresso, chocolate, and whatever else might kill you sooner than your doctor would prefer.

Gelato is not something you should bother with if not done well. That said, Dolce Freddo Gelato does gelato exceptionally well. I live locally and have been going for years. Just had a late lunch at Fusion House across the street and realized I haven't had my gelato fix in way too long so away we went. I am in agreement with just about everyone about the great help here. I do want to say that when you become a regular (and you will) Bob will remember you and that's always a nice feeling. I always have to try the new flavors and usually get a 2 scoop so I have to make sure the flavors won't be disagreeable when combined. They always let you try the new flavors which is a huge plus. The pistachio is one of my fave's and I was pretty sure I was going to get it but then I tried the eggnog (yummmm) and the Almond (with huge pieces of hazelnut in it) and decided those would get along well. Among my other top picks would be mascarpone (trust me), bacio, black raspberry and pumpkin. I find the chocolate a bit too sweet but that doesn't limit my choices. The cappuccino hits the spot on a cold night. The froth will last til the bottom of the cup.
